Black Eye Pea Salad

This is another version of my Black Bean Salad and it’s just as tasty! Serve with grilled shrimp and a collard salad.

Black Eye Pea Salad 6 servings

2 cups cooked black eyed peas, rinsed and drained

2 cups cooked corn, rinsed and drained

2 cloves garlic, minced

1 cucumber, peeled and diced

2 stalks celery, diced

1 cup parsley, finely chopped

1 orange bell pepper, diced

3 scallions, white and green parts sliced thinly

2 tomatoes, finely diced

1/2 to 1 teaspoon red pepper flakes

1 cup olive oil

1/2 to 1/2 cup apple cider vinegar

salt and pepper to taste

Mix everything together and let it chill for at least 30 minutes.
