Sundried Tomato Dressing

I love to use sundried tomatoes when the fresh ones in the store have less flavor than usual and my garden isn’t producing yet.

 

1 pack sundried tomatoes in oil

1 TBSP prepared basil pesto or 1/2 cup fresh basil

3 cloves garlic

pinch dried oregano

salt and pepper to taste

1/2-1 cup extra virgin olive oil or canola oil

1/2-1 cup unseasoned rice vinegar

1-2 TBLSP dijon mustard

 

Don’t drain the sundried tomatoes.  Dump everything into a blender, and process until pureed.  Taste and adjust seasoning.  Add more vinegar or olive oil to get the flavors balanced.
