White Bean Salad

Yet another version of bean salad. This time it’s with a Meditteranean spin. Still yummy.

White Bean Salad

6 Servings

2 cups cooked white beans, rinsed and drained (Northern, cannelini, butter beans)

1/2 cup raw zucchini OR peeled cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup shallot, minced

2 cloves garlic, minced

1/2 cup fresh basil, finely chopped

1/2 cup sundried tomatoes OR 1 cup cherry tomatoes, finely diced

1/2 cup olive oil

3/4 cup lemon juice

1/2 cup feta, fresh mozarella or queso fresco, crumbled

Salt and pepper to taste

Mis everything together, and let chill for at least 30 minutes.
